Dairy-free “Cheese”

Makes 1.5 cup


1.5 cup shelled hempseeds or cashews (preferably soaked 2 to 4 hours)

1.5 tbsp lemon juice

3/4 tsp chopped garlic or 1.5 tsp garlic powder

pinch of Himalayan sea salt to taste

1/4 cup water or as needed (start with less and add as needed)

Place all ingredients into blender and blend until smooth.  Start with low and slowly increase.  You will need to stop the machine and scrap the sides of the blender and restart and repeat this.  Add water until you achieve desired consistency.

Hempseed is a superfood rich in protein and essential fats.  Unlike nuts, this does not require soaking and is a convenient choice as a healthy dairy replacement.
